I’ve always loved food (often, a bit too much). Growing up, food was the centerpiece for relationship, expression, and love. As traveling expands one’s cultural horizons it also opened my mind and palate to the possibilities of what food can actually be. How do we build a foundation ground in ancient wisdom, with the knowledge of the future. In other words – I’m intrigued by age-old techniques in cultivation, harvesting, and cooking, while at the same time assimilating what we continue to learn through science and the miraculous chemistry lab that is the human body.
My passion is to create simple dishes which explode with flavor, by cultivating each ingredient’s complexity so as to let the main ingredient shine. All the while instilling in all who experience our Maui Urban Farm – we are what we eat, eats.
